One of the exquisite specialties of the cuisine of the ABC islands is the ‘bolo pretu (literally black cake). It is actually a dark fruit cake. Dried fruits such as prunes, dates, raisins, currents, dried figs, shelled ground almonds and candied peels of different kinds are put to soak for days, sometimes weeks in advance. This mix is put in syrup made from brown sugar and dark corn syrup, Curacao of Curacao Blue Liqueur, Rum, Brandy, Cherry cordial and Wine with spices like cinnamon, nutmeg, ground cloves, allspice and cardamom. On the baking day this mixture is combined with whipped butter, sugar, eggs and flour until the batter is well mixed and then baked. It will then be left again for a few days to a few weeks to 'ripen'. This very expensive cake will always be part of the Holy Communion’s celebrations, weddings or other events that are truly worthy to celebrate, and people will always try to make it as authentically as possible. A part of it is glazed and finished to beautifully decorated pastry, as the center piece of the confectionery table; the other part is packed in special cake boxes for the guests. In both forms it's a great contribution to any celebration in our community.
