Thomas Dakin was only 25 years old when he started distilling his gin in the 18th Century in a small town between Liverpool and Mánchester

Thomas Dakin Gin is inspired in the botanical selection of that era. Distilled in a small-scale pot still, it contains 11 botanicals including grapefruit peel, liquorice, horseraddish and angelica roots.

Leopold's American Small Batch gin is a soft and elegant gin featuring American pummelos (similar to our grapefruits) within its botanicals.

After the haze comes the munchies. That's why we serve it with a minty-sweet After Eight. In the menu: Milk-washed Calvados, homemade crème de menthe, Gagliardo Bitter Fernet Radicale and chocolate bitters. Green love.

As you may know, Bluebird propose always its "Take it easy" cocktails with a low ABV so you can still enjoying several drinks without getting too drunk.

This doesn't mean you have to refuse to an elegant and complex only-booze based cocktails, and the Pas Tanque is an example of this: Perfect sherry blend (Fino, Oloroso, Manzanilla & Pedro Ximénez), Amaro di Angostura and a drop of Absinthe.
