Day 2: Watermelon salad!

Ingredients (per person) 1 slice of watermelon 50g feta cheese ... Salad leaves Fresh mint

Cut your watermelon into cubes Cut your feta into cubes Finely chop the mint leaves Place all the above in a bowl or on a plate with your salad leaves and drizzle with a little, good quality, olive oil (vinegar or lemon juice optional, but not necessary)

Particularly good with barbecued chicken or homemade beef burgers.

DAY 1: Courgette and Tuna Bake

Per 'serving' 1 medium size green courgette 1 egg... 1/2 small tin of tuna 1/2 tbsp olive oil 1 tablespoon either grated Mozarella or grated Havarti light cheese

Cube the courgette and toss in the oil. Place on a lined baking tray and cook in the oven, 180o, for 20 minutes or until nice and tender.

Allow to cool for a few minutes, add the egg, the cheese and the drained tuna and mix well.

Finallly pour into an oven proof dish lined with baking parchment (avoids sticking) or if you like you can pour it into a foil tray ready for the beach! Sprinkle a tiny bit of cheese on top.

Back into the oven for 25 minutes and ready!!

You can make a huge one or a small one according to your needs and it can be kept in the fridge for a couple of days once made.

.........this weeks NATUR HOUSE RECIPE is not only delicious and easy, but itโ€™s made with ingredients that most of us will have in our fridges! So itโ€™s also a great emergency lunch or supper!! Plus itโ€™s just as yummy cold so a fantastic packed lunch/beach lunch option........

SKINNY QUICHE โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”

3 eggs 3 egg whites 3 low fat triangle cheeses sliced in half 200g ham chopped 2 low fat yogurts 1 tablespoon grated mozzarella Pepper & Parsley

You will need an 8 inch quiche dish or if you are making it to take somewhere, use an equivalent sized foil tray.

Pre heat the oven to 180oC

Place the ham in the bottom of your quiche dish Next place the sliced cheeses on top Now beat your eggs and egg whites together and finally mix in the yogurts (mix the yogurt a little before adding to the egg mixture) Add a little freshly ground black pepper and some dried parsley. Mix gently. Pour your egg mixture over the cheese and ham. Sprinkle the grated mozzarella over the top.

Pop your quiche into the oven for 35-40 minutes.

Ovens vary so a good way to check it its ready is to give the dish a little shake. The middle should be set before you take it out of the oven.

ONE, TWO, THREE, FOUR, FIVE.....PRAWN & ROASTED TOMATO COURGETTI !!!

Super easy, ready in 15 minutes, yummy mid week supper for when you are in a hurry!!

1 packet of cooked king prawns... 2 courgettes - spiralised or grated 20 - 30 cherry tomatoes - roasted Crushed garlic - about 2 cloves

FIRST: Put your cherry tomatoes in a pre heated oven (180oC) with a little olive oil for 15 minutes until tender

TWO: Put your courgetti into the microwave for 5-10 minutes to warm in through

THREE: Pan fry your prawns for a few minutes with a little crushed garlic and a small amount of olive oil

FOUR: Mix One, Two and Three all together!!

FIVE: Enjoy !! ๐Ÿ˜Š๐Ÿ˜Š

CHICKEN BREASTS STUFFED WITH RED PEPPERS AND LOW FAT CREAM CHEESE โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”

2 chicken breasts 1/2 a large red pepper... 1 tablespoon low fat cream cheese (eg. Philadelphia Light) Salt and pepper

Pre heat your oven to 180oC

Cut a pocket into your chicken breasts. Sprinkle with a little salt and pepper. Chop the red pepper into small pieces and mix thoroughly with the cream cheese. Fill the โ€˜pocketsโ€™ of your chicken with your cheese and pepper mixture and then use toothpicks to close it as tightly as possible.

Place on a foiled lined oven tray and pop into the oven for 15-20 minutes (time will vary a little according to the size of your chicken breasts.

When they are ready, put them on a plate/dish to serve and spoon some of the cheese and peppers which will have oozed out and made a sauce over the chicken breasts.

Enjoy!!!

Ps. You could use any colour of peppers in this recipe!! Or even chopped up broccoli!! Be inventive!!

THAI COCONUT PRAWN BOWL !!!๐Ÿฆ๐Ÿฅฅ๐ŸŒถ๐Ÿต

200g raw king prawns peeled 200g baby spinach 2 courgettes grated ... 1 carrot grated 1 tbsp freshly grated ginger 3 tbsp fresh coriander finely chopped 1 fresh red chilli (seeds removed - unless you like your food very spicey) 1 teaspoon Thai green curry paste 400 ML vegetable stock - either make your or use 2 Dietesse Stock Cubes 2 low fat coconut yogurts 1 tbsp olive oil

In a bowl mix the prawns and the fresh grated ginger and set aside. In a large heavy based pan heat your oil and gently fry the curry paste for 5 minutes. Add the grated carrot and cook for 2 minutes. Next add the grated courgettes, chopped chilli, chopped coriander, prawns and ginger. Stir gently till it is all mixed together and your prawns have started to turn pink. Add the stock. Cover and simmer for 5 minutes. Add all the spinach, stir and let it wilt. Finally mix the low fat coconut yogurts well and then add them too. Gently heat through.

Serve immediately garnished with a little fresh coriander!

Serves 2 (You can substitute the prawns with cooked shredded chicken in you like)
