AERO MOLE is all set to take off from Fonda NBO on the 15th and 16th of September. Come celebrate Mexican Independence day with a platter of seven moles served with your choice of chicken, pork, veg croquettes or potato-chickpea croquettes.

The term mole encompasses a wide variety of sauces used in Mexican cuisine. Many have over 20 ingredients with flavours that range from bittersweet to spicy; and consistency that can be soupy or thick like barbecue sauce. This photo showcases some of the key ingredients in the various moles you will get to taste soon.

Friday Fun Fact: Did you know that Mariachi is listed on the UNESCO intangible cultural heritage list?

This form of music emerged in the early 1900s when indigenous musicians adopted some European instruments and the practice of playing in small groups into their cultural music.

Today, Mariachi are street musicians that perform with violins, trumpets and guitars. These musicians normally dress in traditional outfits - can we say bling - and can play a huge variety of music, ...both traditional and modern, in their own special style.

In fact, one of the most important functions of the Mariachi Band, at least in Mexico, is to serenade a gentleman’s sweetheart. In the Mexican culture, not so long ago, young men and women were usually kept apart from one another. The gentleman who wanted to court the lovely lady of his dreams, would hire the Mariachi singers to serenade his loved one, as a sort of musical love note.

Come and experience this amazing heritage right here in Nairobi at FONDA NBO's Mariachi Fest Nairobi featuring the one and only Kevin Munyi - El Guitarrista this Saturday and Sunday from 6-9pm..

Today marks the start of Nogada season at FONDA NBO. For a limited time only, come and enjoy one of Mexico's most patriotic of dishes. (remember our previous post?).

This dish is a tantalizing surprise to the taste buds, the slight spice of the roasted poblano chile is complemented wonderfully by an eclectic mix of meat or veg, fruit and spices. The stuffed chile is covered in a creamy walnut sauce made from painstakingly peeled walnuts! It really is quite the combination, both in flavor and texture: aromatic, savoury, and sweet, often all at once. And as tradition demands, we garnish it with pomegranate seeds.
