After water, tea is the most popular beverage in the world. Appreciated equally for the pleasure it offers, for its health benefits and as a pure and natural drink, fine tea requires care in its preparation and presentation, to bring out its true personality.

The Dilmah School of Tea aims to inculcate respect for the ancient and delicious herb, through a deeper understanding of its nature. Ultimately the knowledge that we would like to present at the Dilmah School of Tea is intended to share with tea aficionados around the world, the joys, the ethics and the healthfulness in tea. That means greater enjoyment of the richness, variety, flavour and antioxidants in tea in the home, in restaurants, cafes and hotels, serving fine, fresh tea with elegance and style, without compromising its taste, flavour or natural goodness.

This Tequila day, we recommend you try making this digestive; Ingredients: 50 ml chilled Dilmah Green Tea with Jasmine 50 ml Don Julio Reposado... 10 ml orange syrup 10 ml ginger syrup 10 ml fresh lime juice Method: 2 dashes grapefruit bitters Add all the ingredients to an ice-filled mixing glass and stir for 20 seconds. Fine-strain into an ice-filled double old-fashioned glass. Garnish with an orange twist.

Chefs Dammika Herath and Tharindu Ganihiarachchi of Radisson Blu Hotel, Dubai Deira Creek, were presented with the Award for the Best use of Tea at the Global Chefs Challenge. The competition recognizes the most innovative and respectful use of tea in dessert and is judged by a panel of culinary judges that includes Chefs Gilles Renusson, Otto Weibel, Chern Chee Hoong, Kenny Kong, Rudy Muller & Florian Guillemenot. The floating Dilmah Earl Grey tea chocolate mousse with chocolate crumble with passion fruit sorbet and strawberry sensation was selected by the judges for the best use of tea and the award presented at the Gala Dinner event that concluded the 4-day Global Chefs Congress in Kuala Lumpur.
