At Eight Signatures Seafood Restaurant 八鲜过海, we focus on providing the best selection of food choices to all our customers. We have shortlisted the best 8 dishes in the 8 different food categories to be included in our menu, with each telling their own story. They were all personally created and chosen by the owner.
However, this does not mean we don't spice things up. We do change our menu from time to time and keep our customers intrigue and wanting more.
By doing so, we hope to ensure top notch quality for all the dishes in our menu and aim that all our dishes will become our signature dishes that you should try.

The Story Behind 8 Signature's Truffle Chicken:
In 2015, 阿乐’s wife was pregnant and was constantly ill from morning sickness and bouts of vomiting. He tried cooking up various different dishes for his wife. However, her appetite worsened and his wife became skinnier. Anxious, he recalled that black truffles are rich in protein and has a unique taste that could whet one’s appetite. Thus, he proceeded to marinate chicken with black truffle. He noted that black truffles have a v...ery strong taste and took care to infuse the chicken with a mild truffle flavour. This proved to be successful. When his wife tasted his truffle chicken, her appetite grew. Eventually, his wife successfully gave birth to his son, Lin Zi (麟子). From this incident, 阿乐 further refined the dish and added it to the Eight Signatures Menu in dedication to his wife and son.
The wild black truffles are quality chosen to be high in protein, immunity enhancing as well as anti-aging and anti-fatigue.

Ever wondered why we serve stir-fried prawns with tea leaves?
Emperor Kangxi went south for an unofficial visit and had a meal in a local restaurant. When the waiter saw the emperor’s hidden dragon robes, he quickly went to inform the shop owner. The shop owner panicked and accidentally sprinkled tea leaves instead of diced onions when frying the prawns. Surprisingly, the tea leaves complimented well with the fried prawns. The emperor praised the dish and it became an imperial must-have food. Since then, this dish became famous.
We specially selected aged Yunnan Pu'er tea leaves to match with our fresh prawns. Providing a special tea fragrance, these tea leaves further enhance the sweetness of the prawns while reducing the greasiness of the prawns. Sweet, fresh and delicious!
