NAVARRO BISON BURGERS 16 oz bison jalapeno onion mushrooms... pepper sweet potatoes spinach butter Preheat oven to 375 and bake sweet potatoes, about one hour. chop up jalapenos and onion, saute in butter. In a med mixing bowl place bison and mix with onion mixture. form 4 patties. Heat a pan over med-high heat and cook patties until desired temp. While the patties are cooking, saute mushrooms in butter. On a plate chop up fresh spinach. Place cooked patties on spinach and top with mushrooms serve with sweet potato.

Apricot Pork Ingredients 4 (4-5 ounce) boneless center cut pork chops (or 2 butterflied 8-ounce chops) 1/2 teaspoon garlic powder 1/2 teaspoon freshly cracked black pepper... 1 tablespoon avocado oil 1 clove garlic, smashed 1 sprig thyme 1/4 cup apricot preserves

Preparation Heat oven to 425F. Rub pork chops with garlic powder and pepper on both sides . place skillet on the stovetop over high heat. Add oil and swirl to coat the pan. Sear pork chops for 2-3 minutes per side. Place in the oven to finish cooking, 5-10 minutes or until pork reaches an internal temperature of 145F. Remove pork chops, place on a plate and cover. Place skillet over medium-low heat on the stove. Add garlic, thyme, apricot preserves, Whisk to combine and cook until thickened, about 5 minutes. Serve pork chops with a drizzle of apricot sauce.

ALMOND TILAPIA Ingredients 1/4 cup raw almonds 1/4 cup panko bread crumbs 1/4 teaspoon black pepper... 1/4 teaspoon garlic powder 1 lemon 2 (6-ounce) tilapia filets Finely chopped parsley, for serving (optional) Preparation Heat oven to 375F. Line a baking sheet with parchment or a silicone baking mat. combine almonds, panko, pepper, and garlic powder. Squeeze lemon over fish fillets and coat both sides with almond mixture. Place on prepared baking sheet. Bake for 10 to 15 minutes (depending on the thickness of fish) and then place under the broiler for 3-5 minutes to crisp.

WILD RICE WITH SUN DRIED TOMATOES 2 tablespoons pine nuts 1 cup wild rice 1 cup sun dried tomatoes, not packed in oil 1/4 cup sliced black olives... 1/4 cup minced parsley INSTRUCTIONS Cook the rice in an abundant amount of boiling water in a large pot for 35 to 45 minutes or until the grains have almost doubled in size and are tender, but still chewy. Toast the pine nuts lightly (dry skillet) until tan and add to rice. Gently toss all ingredients together to mix.

250 CALORIE CHICKEN POT PIE but this is completely up to you, 1 cup=250 cal

Ingredients 1/4 cup unsalted butter ... 1/2 cup chopped onion 1/2 cup chopped green or red bell pepper 1/2 teaspoon black pepper 2 tablespoons flour 2/3 cup milk 1/3 cup heavy cream 1 cup chicken broth 3 cups cooked chicken, cubed 16-ounce bag frozen green beans 1 recipe biscuit dough Preparation Preheat oven to 400F. Melt butter in large saucepan over medium heat. Cook onion in butter until it begins to soften. Add chopped pepper and black pepper, and let it cook for 1 minute. Add flour ; let it cook for 1 minute. Add the milk, cream, and broth. Add the chicken and then green beans. Some water will come out of the beans during cooking, so the sauce should be a little on the thick side at this point. While the mixture heats back up, make the biscuit dough.

When the biscuit dough is made and the pot pie mixture is bubbling hot, pour the pot pie filling into a 2-quart casserole dish. Drop spoonfuls of biscuit dough onto the top, leaving room for expansion. (If you have extra dough, you can drop spoonfuls onto a piece of aluminum foil to cook alongside the pot pie.) Bake about 10 minutes until biscuits are golden brown.
