Good BEEF RIB Thursday Morning, Facebook Friends !!!

Yes, it's BEEF RIB Thursday, again, but before I get into the standard regaling of our ENORMOUS BEEF RIBS, I wanted to apologize to everyone for not being "on top of my game as far as the daily posts go, lately...

Honestly, it's been fairly busy around these here parts as well as we've had some folks taking some time off for various reasons which added to my personal workload, so the posts and updates have been a bit shorte...r and less frequent than I would like.

My apologies. I'll try and get everyone all riled up and back to normal within the next day or so... Because, really, who doesn't like to get all riled up first thing in the morning, eh ?

Also a great big "Thank You" to our own T-Rex for picking up the posting slack as I went home early yesterday to get some sleep. I never thought I would say that after working 8 hours, I would then be taking "half a day off" to get some rest, but I guess it's the nature of the beast when you run a BBQ Joint.

Anyway, our BEEF RIBS are what's known as a "Maui" cut or a "Texas" cut (depending on what part of the country you are closest to ? I have no idea... Our supplier calls them a "Maui" cut but everyone I know calls them "Texas Beef Ribs"). Take your pick. We'll just call them "delicious"!!!

Smoked anywhere between 6 and 10 hours (depending on size) they are a hunk of meat worth hankering for. We sell them by the pound and the smallest we've seen recently was about 3/4 of a pound and the largest was nearly 3 pounds for one "bone" !!! Now, we'll do our best to cut to whatever size you like but generally they come in at about a pound to a pound and a half. Sorry, but we can't guarantee we'll have rack that can be cut into sections of less than a pound. We'll see what we have and do what we can, but it's the nature of the racks we get that will determine what we can do with them.

I also got a lot of folks who commented on the different types of Beef Ribs, so for those that missed it, I'll post the picture that explains the different cuts again.

OK, I gotta get back to work. I hope everyone stays safe out there and has a great day. Swing on in and yell "HI !!!" because if you know me, you know I'm just about deaf as a stump and my hearing aids don't work so well in the kitchen with the exhaust fans humming.
