Tammy’s passion for baking began as a teenager while trying out different cake recipes at family functions as well as fulfilling her couch-potato brothers’ requests for her delicious melt-in-your-mouth chocolate chip cookies. Being the good sister and daughter that she was, Tammy pre-made batches of cookie dough and froze them for easy DIY baking for her family.
To satisfy her thirst for all things sweet, Tammy enrolled in the baking and pastry curriculum at the New York Restaurant School in downtown Manhattan. Here, she honed and refined her skills in dessert making! She graduated from the culinary arts program in 1999 and furthered her commitment to the food-service industry by completing the Restaurant Management program at the New York Restaurant School.
Tammy has worked as a pastry chef at Mesa City in NYC and has also trailed at the famous Blue Water Grill in Union Square. Her multi-faceted portfolio in the food industry also includes management positions at the Marriott & Renaissance Hotel Restaurant and at Starbucks. She was also a Food Service Director for Pomptonian Food Service, where she directed a district-wide school food service program. Her time at Paris Gourmet was also another fun experience, melding sales, catalog development, and setting up pastry competitions.
Her passion for pastry and her desire to conceive sinfully sweet creations as an entrepreneur at CupCake CornuCopia has never been more apparent. Tammy’s specialties include green tea tirimisu, cheesecakes, pear & almond tarts, banana crunch cake, melt-in-your-mouth assorted chocolate truffles and of course, decadent wedding cakes and cupcakes.
